Fillings and Icing

  • Swiss Meringue Buttercream – This is what we use in almost all of our cakes and cupcakes. It’s creamy, smooth and not overly sweet. It is made from cooked egg whites and sugar, butter, and flavourings like vanilla.
  • American Buttercream – This is a fluffy and sweet type of buttercream. It develops a slight crust on the outside. This icing is what most store bought cakes and cupcakes have. It is made from butter, icing sugar and flavourings like vanilla. This type of buttercream can be modified for vegan cakes and cupcakes!
  • Chocolate Ganache – Most commonly used for irregular shaped cakes since it sets harder than buttercream which helps with holding up the cake’s shape/structure. It is made from chocolate and cream. Whipped ganache can still be used as a filling or icing but just a heads up that it will harden (but not too hard as if it’s placed in a freezer).
